One-Pan Bold Honey BBQ Chicken Rice

A simple yet delicious one-pan dish featuring marinated chicken, flavored rice, and colorful vegetables, all infused with a sweet and tangy honey BBQ sauce.

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Start by chopping your vegetables, measuring out all the ingredients, and prepping your chicken.
  2. Sear the chicken: Heat a large skillet over medium heat, add oil, and place the chicken pieces, cooking for about 4-5 minutes per side until browned.
  3. Mix the sauce: While the chicken is searing, mix the BBQ sauce and honey in a small bowl until well combined.
  4. Add the rice: Remove the chicken, add rice and mixed vegetables to the same pan, stirring for a minute to coat them.
  5. Pour in the broth: Add the chicken broth, garlic powder, onion powder, and smoked paprika, stirring well.
  6. Nestle the chicken: Return the chicken to the pan on top of the rice, drizzle with the honey BBQ sauce blend.
  7. Bring to a simmer: Increase heat until edges bubble, then reduce to low and cover, simmering for 25-30 minutes until rice is tender.
  8. Fluff and serve: Remove from heat, let rest for 5 minutes, then fluff the rice with a fork.

Notes

For extra flavor, add a tablespoon of vinegar to the broth. Ensure gluten-free status if needed.
