Honey Lime Chicken with Mango Salsa

A bright and flavorful dish featuring juicy chicken marinated in honey-lime, topped with refreshing mango salsa.

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Prep the chicken by patting them dry and placing them in a zip-top bag or shallow dish.
  2. Make the marinade by whisking together honey, lime juice, olive oil, garlic powder, salt, and black pepper.
  3. Marinate the chicken in the marinade for at least 30 minutes, or as long as overnight.
  4. Prepare the mango salsa by combining diced mango, red onion, red bell pepper, cilantro, and lime juice in a bowl.
  5. Preheat the grill to medium-high heat.
  6. Grill the marinated chicken, cooking for 6-7 minutes on one side without flipping.
  7. Flip the chicken and cook for another 5-7 minutes until cooked through (165°F / 74°C).
  8. Rest the chicken for about 5 minutes before slicing.
  9. Serve the sliced chicken on a platter and top with mango salsa.

Notes

For added flavor, serve with coconut rice or a simple green salad.
