  • 2 medium Sweet Potatoes, cubed
  • 2 cups Fresh Spinach
  • 3 cloves Garlic, minced
  • 1 Onion, chopped
  • 2 tbsp Olive Oil
  • 1 tsp Paprika
  • 1 tsp Cumin
  • Salt & Pepper to taste
  • 1/2 cup Chicken Broth or Vegetable Broth
  • Optional Toppings: Grated cheese, avocado, fresh herbs

Instructions

  1. Prep Your Ingredients: Wash, peel, and cube sweet potatoes; mince garlic and chop onion.
  2. Heat the Skillet: Place a large skillet over medium heat and add olive oil.
  3. Cook the Ground Turkey: Add ground turkey to the skillet, breaking it up, and cook until browned (5-7 minutes).
  4. Add Onions and Garlic: Push turkey aside; add chopped onions and garlic; sauté until fragrant (4-5 minutes).
  5. Sweet Potatoes Join the Party: Add cubed sweet potatoes, season with paprika and cumin, and cover with broth. Simmer for about 10 minutes.
  6. Add Spinach and Finish: Stir in spinach until wilted. Adjust seasonings if needed.
  7. Serve It Up: Plate the dish, garnishing with optional toppings as desired.
