Savory Zucchini Quick Bread

A delightful quick bread featuring fresh zucchini, herbs, and a hint of cheese, perfect for any meal.

  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup olive oil
  • 2 large eggs
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup chopped fresh herbs (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate your zucchini and wring out excess moisture.
  3. In a mixing bowl, combine flour, cornmeal, baking powder, baking soda, salt, pepper, garlic powder, and sugar.
  4. In another bowl, whisk together olive oil and eggs.
  5. Pour the wet mixture into the dry ingredients and fold gently until combined.
  6. Add in the zucchini and optional cheese/herbs.
  7. Pour the batter into a loaf pan and smooth the top.
  8. Bake for 50-60 minutes until a toothpick comes out clean.
  9. Remove from the oven and cool for 10 minutes before transferring to a wire rack.

Notes

Serve warm with olive oil, butter, or as a side to soups and salads.
