Crockpot Pierogi Casserole with Kielbasa

This comforting casserole features layers of cheddar pierogies, savory kielbasa, and creamy broth, slow-cooked to perfection for a delicious and hearty meal.

  • 1 package Cheddar Pierogies (frozen or homemade)
  • 2 cups Creamy Chicken Broth
  • 1 lb Savory Kielbasa, sliced
  • 1 cup Cheddar Cheese, shredded
  • 1 Onion, chopped (optional)
  • 2 cloves Garlic, minced (optional)
  • Salt and Pepper to taste

Instructions

  1. Prep Your Ingredients: Slice the kielbasa into bite-sized pieces and chop onion and garlic if using.
  2. Sauté (Optional): Sauté onion and garlic in a bit of oil or butter until golden, or skip to keep it rustic.
  3. Layer the Pierogies: In your crockpot, add a layer of pierogies at the bottom.
  4. Add kielbasa and veggies: Sprinkle sautéed onions and garlic over the pierogies, then add the sliced kielbasa.
  5. Pour in the Creamy Chicken Broth: Pour slowly over the layered mixture.
  6. Season It Up: Sprinkle salt and pepper to taste.
  7. Cheese, Please!: Add some cheddar cheese on top.
  8. Set It and Forget It: Cover and cook on low for 5-6 hours or high for 2-3 hours.
  9. Savor the Moment: Stir before serving and let cool for a few minutes.

Notes

This dish can also be made vegetarian by substituting kielbasa with mushrooms. Freeze leftovers for later enjoyment!
