Stuffed Acorn Squash

A warm and comforting dish featuring acorn squash stuffed with a savory mixture of ground turkey, wild rice, cranberries, and pecans.

  • 2 Acorn Squash
  • 1 lb Ground Turkey
  • 1 cup Wild Rice
  • 1/2 cup Dried Cranberries
  • 1/2 cup Pecans (chopped)
  • 1 small Onion (diced)
  • 2 cloves Garlic (minced)
  • 1 tsp Thyme (fresh or dried)
  • Salt and pepper: To taste
  • Olive oil: For roasting

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the squash by cutting in half and scooping out the seeds, then drizzle with olive oil and season with salt and pepper.
  3. Bake the squash for about 25-30 minutes until tender.
  4. Cook the wild rice according to package instructions.
  5. Sauté the onion and garlic in olive oil until translucent.
  6. Brown the ground turkey with salt, pepper, and thyme in the skillet.
  7. Combine the turkey with cooked wild rice, cranberries, and pecans.
  8. Fill the squash halves with the turkey and rice mixture.
  9. Return the stuffed squash to the oven and bake for an additional 10-15 minutes.
  10. Serve warm and enjoy!
