Witches Brew (Green Pea Soup)

A delightful and whimsical green pea soup perfect for Halloween gatherings, blending warmth and creativity.

Ingredients

  • 3 tbsp olive oil
  • 1 onion (roughly chopped)
  • 3 garlic cloves (minced)
  • 1 cup potatoes (diced)
  • 3 cups frozen green peas
  • 1 handful of baby spinach
  • 1 tsp ground pepper
  • 1 tsp salt
  • 3 cups vegetable stock
  • 1 tbsp olive oil (for mushrooms)
  • 8 oz white or brown mushrooms
  • 1 cup vegetable stock
  • 1/2 tsp salt (for mushrooms)
  • Heavy cream or coconut milk (optional)
  • Micro rainbow mix and peas for garnish
  • Ground black pepper and crushed red pepper (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Toss in the onion and let it cook until translucent.
  3. Add the minced garlic and continue stirring.
  4. Add the diced potatoes and let them mingle for about 3 minutes.
  5. Bring in the frozen green peas and baby spinach, stirring until wilted.
  6. Pour in the vegetable stock, salt, and pepper, then bring to a boil.
  7. Reduce the heat and let it simmer for 10-15 minutes.
  8. Sauté the mushrooms in another pan with olive oil, stock, and salt until golden.
  9. Blend the soup until smooth, adjusting thickness as desired.
  10. Finish with cream or coconut milk, heating through.
  11. Taste and adjust with salt and pepper.
  12. Serve the soup in bowls, garnishing with micro greens and cream as desired.

Notes

For a spicy twist, add jalapeños or sriracha. For extra protein, stir in chickpeas when blending.
