  • 2 large eggs

  • 1 cup mashed strawberries
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Prepare the strawberries by rinsing, hulling, and mashing them lightly.
  3. Mix your dry ingredients in a large bowl: flour, sugar, baking soda, and salt.
  4. Combine your wet ingredients in another bowl: oil, eggs, vanilla extract, and mashed strawberries.
  5. Merge the wet mixture into the dry ingredients, stirring gently until just combined.
  6. Fold in the nuts if using.
  7. Pour the batter into the prepared loaf pan and spread evenly.
