Cheesy Zucchini Breadsticks

Delicious cheesy zucchini breadsticks that are perfect for snacking or as a side dish, inspired by a cherished family recipe.

  • 2 medium zucchinis (about 2 cups shredded)
  • 2 large eggs
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded mozzarella cheese (for topping)
  • Optional: fresh parsley or basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare your zucchinis by rinsing and grating them.
  3. Combine the drained shredded zucchini, eggs, half a cup of mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper in a large mixing bowl.
  4. Line a baking sheet with parchment paper or grease it lightly with cooking spray.
  5. Spread the mixture onto the baking sheet, forming a rectangular shape that’s about ¾ inch thick.
  6. Bake in the preheated oven for 20–25 minutes, or until the edges are golden brown.
  7. Remove from the oven and sprinkle the remaining cup of mozzarella cheese over the top.
  8. Return to the oven for an additional 5–7 minutes, until the cheese is melted and bubbly.
  9. Let the breadsticks cool for a few minutes before slicing them into stick-like pieces.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. They can be frozen and baked from frozen for 10-15 more minutes.
